Feeling grateful for seaweed today— and for the past two weeks. Having a broken fridge is no fun but it has required creativity to eat as nutritiously and balanced as possible without going out for every meal. Paired with my beloved mackerel, and some tomatoes, seaweed just needs fresh water to soak in. If you can’t have fresh greens at every meal seaweed is a good substitute as it provides many vitamins and minerals like Bs zinc and iron to name a few.
